    Broccoli and Cheese Breakfast Pizzas

    These delicious breakfast pizzas are made with soft scrambled eggs, steamed broccoli, and shredded cheese served atop crispy tortillas. These pizzas are such a fun and simple breakfast idea the whole family will love!

    Breakfast might just be my favorite meal of the day although I don't get around to making it every day. My husband I both are huge fans of eggs and often have them for lunch or dinner in addition to breakfast. I'm always looking for new ways to prepare and serve eggs and that's just how these Broccoli and Cheese Breakfast pizzas came to be!

    These delicious breakfast pizzas are so fun and easy to make and require only a few simple ingredients. With three eggs, whole grains, and a half cup of broccoli florets per serving, these pizzas are also extremely nutritious and filling. Drizzle a little hot sauce or sriracha over top of finished pizzas for a little added kick!

    Making Broccoli and Cheese Breakfast Pizzas

    Preheat your oven to 400 degrees F. Lightly spray a baking sheet with cooking spray and place tortillas onto a baking sheet. Bake tortillas in preheated oven for 5-7 minutes until they are lightly golden and crispy.

    Heat a large nonstick skillet, lightly coated in cooking spray, over medium-high heat. In a large bowl, beat together 6 large eggs and a ¼ cup of milk until combined. Season with salt and cracked black pepper. Add beaten eggs to preheated skillet and scramble until done to your liking. I recommend a soft scramble for these pizzas as they will cook in the oven as well.

    Top each tortilla with an even amount of scrambled eggs. Top eggs with steamed broccoli, then sprinkle each pizza evenly with cheese and everything bagel seasoning. Bake pizzas for 3-5 minutes, until cheese is melted.

    Garnish pizzas with chopped green onions and a drizzle of hot sauce if desired and enjoy!

    What Kind of Tortilla Should I Use?

    Any variety of soft taco-sized tortillas will work fine. I use whole wheat tortillas to incorporate nutritious whole grains.

    You may use regular flour, whole wheat, flavored wraps, or even corn tortillas if you prefer. The key is the crisp them up in the oven before adding toppings so that they do not get soggy.

    What Toppings Can I Substitute?

    Honestly, just about any vegetable goes on these breakfast pizzas! Feel free to substitute spinach, mushrooms, tomatoes, black beans, chickpeas, or any other veggie you have a taste for.

    Just make sure that your veggies are softened (except for spinach and tomatoes) before adding them to the pizza as they will not have long enough in the oven to soften.

    Also, I recommend no more than two types of veggies in addition to the eggs to keep the pizzas from becoming a soggy mess. Spread toppings out in an even, thin layer.

    Ingredients
      

    • nonstick cooking spray
