This Creamy Avocado Pasta is made with spaghetti coated in a delicious avocado sauce mixed with sweet corn and sun-dried tomatoes. This dish can be served warm or cold and is the perfect spring or summer meal!

This was my first time trying an avocado sauce for pasta and I must say I was very pleasantly surprised. The avocados made such a rich, creamy and smooth sauce which coated the pasta perfectly and the sweet corn and sun-dried tomatoes pair beautifully with the sauce!
What You Will Need to Make This Avocado Pasta
- 12 ounces of dried spaghetti
- 2 avocados
- baby spinach leaves
- olive oil
- ½ a lemon
- canned sweet corn
- sun-dried tomatoes
- salt + pepper
How to Make Creamy Avocado Pasta
Cook spaghetti in salted water according to package instructions until al dente. Be sure and reserve a cup of the pasta water if you drain the spaghetti.
To the bowl of a food processor, add the flesh of two avocados, spinach, olive oil, lemon juice and salt and pepper and pulse until smooth. Add a little pasta water while continuing to pulse until you reach a smooth consistency that will coat the pasta nicely, about ¼ cup should do it.
Transfer cooked pasta to a large mixing bowl and add sauce, corn and sun-dried tomatoes. Gently toss with silicone tongs to combine all ingredients. You can add a little more of the pasta water to the bowl while mixing if needed to reach a nice, creamy consistency.
Season pasta with more salt and pepper to taste. Transfer pasta to a serving bowl and top with shaved parmesan. Enjoy!
Storing Creamy Avocado Pasta
This pasta can be stored in an airtight container in the fridge for up to three days. The color of the sauce may start to darken after a day due to the way avocados react to being exposed to oxygen.
This pasta may be served cold or warm according to your preference.
What Other Vegetables Can I Add to Creamy Avocado Pasta?
This creamy avocado pasta is absolutely delicious with no additional ingredients added but compliments other veggies and toppings perfectly.
Roma or cherry tomatoes, sweet peas and fresh herbs would all be nice additions to this creamy avocado pasta. You can even add chopped nuts for some added crunch if you like!
What to Serve with Creamy Avocado Pasta
Serve this pasta as a main course with a side of garlic bread or fresh rolls for a delicious spring lunch or dinner.
You can also serve this avocado pasta a side dish to baked or grilled chicken or fish. Add a crisp, spring side salad and enjoy it on the patio for a fresh, al fresco style meal!
