    Yesterday I celebrated hitting a goal of mine, which was reaching 10,000 Instagram followers! It is such an amazing feeling to know that so many people support my journey. I love being able to connect with you guys through delicious food. What better way to celebrate a milestone than a stack of Giant Funfetti Pancakes?

    Pancakes are probably my favorite way to load up on carbs. There's something about these fluffy, flat little cakes that I just can't say no to. The wonderful thing is that are so many ways to make pancakes healthy by using different types of flour or milk and adding ingredients such as fresh fruit or nuts.

    We were celebrating with this stack, so I went all out using cake flour, buttermilk, and throwing in tons of colorful sprinkles! The cake flour makes these pancakes extra light and fluffy. Oh, and why not make them almost as big as a dinner plate while you are at it? Go big or go home, right? Make these for your next birthday breakfast or just because!

    Making Giant Funfetti Pancakes

    The process is quite simple for these babies.

    Melt two tablespoons of butter on an electric griddle or in a large nonstick skillet over medium-high heat.

    In a large bowl, whisk together cake flour, baking powder, sugar, and salt.

    Add eggs, buttermilk, melted butter, and vanilla extract. Stir to combine. I like to add in the buttermilk a little at a time until I reach my desired consistency. You may not need all of the buttermilk. Mix in sprinkles

    Ladle about ¾ cup of batter onto a hot griddle or skillet, spreading out to about 8-inch circles. Add a few more sprinkles over top.

    Cook until bubbles start to form and the bottom is brown then flip. Cook until the other side is browned then transfer to a large plate.

    Repeat until all pancake batter is used. You should get four large pancakes.

    Finish pancakes off with a dollop of whipped cream and more sprinkles. Serve with warm pancake syrup.

    A Few Notes for Giant Funfetti Pancakes

    Of course, if you prefer, you can make these into regular-sized pancakes by ladling ¼ cup of batter per pancake onto a griddle or skillet instead of ¾ cup.

    If you do not have any cake flour, you may use all-purpose flour. However, the cake flour gives the pancakes an extra light and fluffy texture.

    Ingredients
      

    • 1 ¼ cups cake flour or all purpose if that is what you have on hand
    • 2 teaspoons baking powder
    • ¼ cup sugar
    • ¼ teaspoon salt
    • 2 large eggs

    • ¾ cup buttermilk
    • ½ teaspoon vanilla extract
    • ¼ cup colorful sprinkles some reserved for topping
    • Whipped Cream
    • Warm maple syrup
