    Strawberry and Apple Crumble

    This lightened up Strawberry and Apple crumble lets the fruit be the star of the dish. Strawberries and apples with a delicious crumble topping makes for the perfect dessert with zero guilt!

    I am certainly getting the hang of this social distancing thing now. I've been doing lots of cooking, which the hubby loves of course, along with exercising more and other projects around the house.

    I am an introvert by nature so staying away from large crowds doesn't bother me nearly as much as I'm sure it does others. Staying in and making a Strawberry and Apple crumble sounds like a fine time to me!

    If you are like me and have stocked up the kitchen to limit trips to the grocery store, you probably have everything you need to make this simple Strawberry Crumble. I've reduced the amount of sugar and chose whole wheat flour and oats for the topping to make this a healthier version of your typical crumble desserts. I also chose to throw a little bit of apple in the mix just for some texture and flavor variety - but you can certainly omit the apple if you like.

    This crumble recipe can be made with just about any fruit or berry of your choosing. On my next trip to the grocery store I plan to pick up peaches to give them this same delicious treatment.

    If you're really in the mood for decadence, top this baby off with some vanilla ice cream for a real treat!

    How To Make Strawberry and Apple Crumble

    • Preheat oven to 375 F.
    • Lightly grease a 9 inch pie dish or an 8 x 8 casserole dish with cooking spray.
    • In a small mixing bowl, combine strawberries, apple, lemon juice, corn starch and 1 tablespoon light brown sugar. Set aside.
    • In a mixing bowl, whisk together flour, oats, baking powder, cinnamon, salt and remaining brown sugar.
    • Incorporate butter into flour mixture with fingers until coarse crumbs form.
    • Press flour mixture into small lumps with hands and sprinkle over strawberries.
    • Bake for 30 to 35 minutes, or until top is golden brown and fruit is bubbling.
    • Remove from oven and let stand a few minutes.
    • Serve warm.

    Ingredients
      

    • 6 cups (about 1-½ pounds) strawberries hulled and quartered
    • 1 large apple cored and cut into chunks
    • 1 tablespoon fresh lemon juice
    • 2 tablespoons corn starch
    • 3 tablespoons dark brown sugar divided
    • ⅓ cup whole wheat flour
    • ⅓ cup rolled oats
    • ½ teaspoon baking powder
    • 1 teaspoon cinnamon
    • ⅛ teaspoon salt
    • 3 tablespoons cold unsalted butter cut into pieces
