A refreshing, zingy non-alcoholic beverage with mint, lime, grapefruit, and ginger beer. This grapefruit ginger beer mocktail is an excellent alternative to a traditional Moscow mule!

Instructions
Add the mint leaves and lime juice to a cocktail shaker and muddle the mint leaves well with a muddler or the bottom of a wooden spoon. This releases the oils in the mint leaves.
Add the grapefruit juice and a small handful of ice cubes to the cocktail shaker and shake vigorously with the top on until the outside of the shaker becomes frosty.
Fill two cocktail glasses with ice and divide the grapefruit mixture evenly among the two glasses.
Top off the glasses with ginger beer until full, and gently stir the mocktails with a cocktail spoon.
Garnish each drink with a wedge of grapefruit and a few fresh mint leaves. Enjoy!
Notes
You may substitute orange juice, pineapple juice, or cranberry juice for grapefruit juice. I recommend using 100% fruit juice.
If you do not have ginger beer, try flavored sparkling water or non-alcoholic prosecco!
