Fresh Pineapple Salsa

This fun salsa is bursting with tropical vibes from fresh diced pineapple. Serve this as an appetizer with chips or on top of fish, chicken or shrimp!

Ingredients

  • 3 cups fresh pineapple diced, about 1 medium pineapple
  • 1 cup tomato diced
  • ½ cup chopped onion yellow or red, about ½ small onion
  • ¼ cup chopped fresh cilantro
  • 1 medium jalapeño* seeded and finely diced
  • 3 tablespoons fresh orange juice about one medium orange, can also sub lime juice
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon of chipotle pepper

Instructions

  • In a medium serving bowl, combine the pineapple, tomato, onion, cilantro, and jalapeño. Add the orange juice, salt and chipotle pepper and stir to combine.
  • Season to taste with more salt or citrus juice if needed.

Notes

*jalapeno is optional but adds a nice kick.
Salsa can be stored in the fridge in an air tight container for up to 3 days.
