Gluten-Free Fruit Pizza

This gorgeous Gluten-Free Fruit Pizza is made with a packaged flatbread mix to create a tender, chewy crust and is then topped with a sweet and tangy cream cheese spread and lots of colorful fruit. This fruit pizza makes the perfect snack or dessert and is so much fun to make!

Ingredients

For Flatbread Crust

  • 1 package of gluten-free flatbread mix like Bob's Red Mill Grain-Free Flatbread mix or any packaged flatbread mix you prefer
  • ½ cup sugar
  • 2 eggs
  • ¼ cup oil
  • ¼ cup water
  • ½ teaspoon vanilla extract

Toppings

  • 8 oz cream cheese softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons buttermilk
  • 1 cup whipped topping
  • 2 large kiwis peeled and sliced
  • ¼ cup fresh strawberries hulled and sliced
  • ¼ cup fresh blueberries rinsed
  • ¼ cup red grapes sliced in half
  • ¼ cup fresh pineapple sliced into small chunks

Instructions

  • Prepare your flatbread crust according to the package instructions, but add ½ cup of sugar to the dry ingredients and ½ teaspoon of vanilla extract to the wet ingredients. Bake your flatbread crust and allow it to cool completely while you prepare your other toppings.
  • In a medium bowl, beat together the cream cream cheese, powdered sugar, vanilla and buttermilk with an electric hand mixer until smooth. Fold in whipped topping and transfer cream cheese mixture to the fridge about 10 minutes to firm up a bit.
  • Once crust is completely cooled, spoon cream cheese spread over crust and spread out into an even layer with a rubber spatula or offset spatula. Top pizza with sliced fruit, starting from the outside and work your way in. You will have some fruit leftover.
  • I started with kiwi on the outermost layer, then strawberries, grapes, blueberries and pineapple in the center. I also added some blueberries around the outer edge in between the kiwi to fill it in. Feel free to arrange your fruit differently if you like.
  • Slice and enjoy!
