Cilantro Lime Rice

- 1 cup white rice long-grain
- 1 tablespoon olive oil extra virgin
- 1 clove garlic minced
- 2 cups chicken or vegetable stock
- ½ teaspoon salt
- ½ cup freshcilantro rinsed and chopped
- 1 large lime zested and juiced
Heat oil in a saucepan over medium-high heat
Sauté 1 cup of rice in the saucepan until lightly browned, add garlic and sauté until fragrant, about 1 minute
Add 2 cups of stock and ½ teaspoon salt to the rice
Bring to a boil and then reduce heat to a light simmer
Let simmer until the liquid is absorbed
Turn off heat and cover, letting rice sit in its own steam for a few minutes
Add chopped cilantro, lime juice and lime zest to rice and stir to combine
Add additional salt and fresh ground pepper to taste if desired
Garnish with cilantro and lime wedges. Enjoy!
