Cilantro Lime Rice

This flavorful rice is packed with fresh lime and cilantro flavors. Serve this rice with your favorite Mexican-inspired dishes to create a delicious themed meal!

Ingredients

  • 1 cup white rice long-grain
  • 1 tablespoon olive oil extra virgin
  • 1 clove garlic minced
  • 2 cups chicken or vegetable stock
  • ½ teaspoon salt
  • ½ cup freshcilantro rinsed and chopped
  • 1 large lime zested and juiced

Instructions

  • Heat oil in a saucepan over medium-high heat
  • Sauté 1 cup of rice in the saucepan until lightly browned, add garlic and sauté until fragrant, about 1 minute
  • Add 2 cups of stock and ½ teaspoon salt to the rice
  • Bring to a boil and then reduce heat to a light simmer
  • Let simmer until the liquid is absorbed
  • Turn off heat and cover, letting rice sit in its own steam for a few minutes
  • Add chopped cilantro, lime juice and lime zest to rice and stir to combine
  • Add additional salt and fresh ground pepper to taste if desired
  • Garnish with cilantro and lime wedges. Enjoy!

Notes

  • leftovers can be stored in an airtight container for up to 5 days.
