Cajun Oven Baked Sweet Potato Fries

These Cajun oven-baked sweet potato fries are an easy-to-make side dish that the whole family will love. Even your pickiest eater will devour these crispy, lightened-up fries!

Ingredients

  • 2 large sweet potatoes scrubbed clean
  • 2 tablespoons melted coconut oil or olive oil or avocado oil
  • 2 tablespoons homemade Cajun seasoning recipe linked
  • 1 tablespoon granuated sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat your oven to 425°F. Spray two baking sheets with nonstick cooking spray and set aside.
  • Cut the ends off each sweet potato, lay it on its flattest side, and slice it into ¼ inch thick slabs. Slice each slab into matchsticks, turning the sweet potato to its flattest slide as you work to maintain stability.
  • Transfer the sweet potato fries to a large mixing bowl, drizzle with the melted coconut oil, and sprinkle with the Cajun seasoning. Toss the fries to evenly coat.
  • Divide the fries among the two prepared baking sheets and arrange them in even layers.
  • Bake the fries for 15 minutes, carefully flip or toss with a spatula, and bake for 10 to 15 more minutes until crispy. Cool slightly and enjoy with your favorite dipping sauce!

Notes

  • Leftover sweet potato fries can be stored in an airtight container in the refrigerator for up to five days.
  • Reheat the fries in the oven for the crispiest texture or reheat them in the microwave.
