Ingredients

  • 8 ounces cream cheese cubed
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 2 cups shredded mozzarella
  • ¼ cup shredded parmesan
  • Juice of 1 lemon
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons unsalted butter
  • 1 small red bell pepper seeded and chopped
  • ½ medium yellow onion chopped
  • 3 green onion stalks chopped, plus more for garnish
  • 1 pound shrimp peeled and deveined, chopped into 1-inch pieces, leave 3 shrimp whole for garnish if desired
  • 3 cloves garlic minced
  • 3 teaspoons homemade Cajun seasoning or store-bought, divided use
  • Chips or veggie sticks for serving

Instructions

  • Preheat your oven to 400°F.
  • In a large mixing bowl, combine the cream cheese, mayonnaise, sour cream, mozzarella, parmesan, lemon juice, Worcestershire sauce, and 2 teaspoons of Cajun seasoning with an electric hand mixer or wooden spoon. Set aside.
  • Melt the butter in a 10-inch cast-iron skillet over medium-high heat. Add the bell pepper, onion, and green onion and cook for 2-3 minutes until softened. Add the garlic, shrimp, and 1 tablespoon of Cajun seasoning, and cook for 3 to 5 minutes until the shrimp are pink and opaque. Do not overcook the shrimp! Set the 3 whole shrimp aside.
  • Pour the shrimp mixture into the bowl with the cheese mixture and mix until combined. Pour the dip back into the cast-iron skillet and bake for 20 to 25 minutes until golden and bubbly around the edges.
  • Garnish the dip with the reserved 3 whole shrimp and chopped green onions. Serve with chips or veggies for dipping.

Notes

  • Medium or large peeled and deveined shrimp work great for this recipe. Chop the shrimp into about 1-inch pieces. If using small salad shrimp, there is no need to chop them.
  • Throw in some extra veggies like corn, celery, broccoli, or spinach.
  • No cream cheese? Substitute Greek yogurt, marscapone, or ricotta.
  • This dip can be prepared (do not bake) a day in advance, wrapped in plastic wrap, and stored in the refrigerator until ready to bake. If baking the dip cold, add 5 to 10 minutes to the cooking time.
  • Leftover cajun shrimp dip can be stored in an airtight container in the refrigerator for up to 2 days.
