Combine the apple, brown sugar, water, cinnamon, cloves, and nutmeg in a medium saucepan and bring to a boil over medium-high heat.
Once the mixture comes to a boil, lower the heat to medium-low and simmer the syrup for 20 to 25 minutes until the apples are very tender and the syrup has reduced.
Remove the pan from the heat, gently mash the apples with a potato masher or wooden spoon, and allow the syrup to cool and infuse for about 15 minutes.
Strain the syrup into a container through a fine mesh sieve, pressing the apples into the strainer to extract as much syrup as possible. Once the syrup is completely cooled, transfer it to a bottle for storage.
- Feel free to use different varieties of apples like Gala, Pink Lady, or Granny Smith.
- Substitute dark brown sugar for light brown or granulated sugar if you'd like a lighter, vanilla-like sweetness.
- You may use ground spices instead of whole. You can adjust the flavor with different spices like cardamom, allspice, or ginger.
