Add the diced peaches, granulated sugar, brown sugar, and water to a medium saucepan and bring the ingredients to a boil over medium-high heat. Once the syrup comes to a boil, reduce the heat to medium and simmer the syrup for about 10 minutes until the peaches are tender.
Smash most of the peaches against the pan with the back of a wooden spoon. Remove the pan from the heat and allow the syrup to cool and infuse for about an hour.
Strain the peach syrup into a container using a fine mesh strainer, pressing the peaches against the strainer with a wooden spoon to get all of the liquid out. You should get about 1 ¼ cups of peach syrup.
Add the peach syrup and lemon juice to a pitcher and pour in 4 cups of cold water. Stir the lemonade with a long-handle spoon until combined. Pour lemonade into glasses over ice and garnish with lemon slices, peach slices, and fresh mint leaves.
- You may make the peach syrup ahead of time and store it in the refrigerator until you are ready to mix the lemonade. Peach syrup will keep for up to a week in the refrigerator stored in an airtight container.
- Freshly made peach lemonade can be stored in a sealed pitcher or airtight container in the refrigerator for up to five days.
