Fried Potatoes with Smoked Sausage

This hearty, comforting fried potatoes with smoked sausage makes an excellent side dish or one-pan meal. Red potatoes, smoked sausage, and onions crisping in a hot skillet will make your kitchen smell amazing!

Ingredients

  • 1 pound red potatoes washed and quartered
  • 3 tablespoons extra-virgin olive oil
  • 8 ounces smoked sausage such as andouille, beef, or turkey, sliced into discs
  • 1 cup sweet onion thinly sliced
  • 1 - 2 tablespoons homemade Cajun seasoning or store-bought
  • Salt and cracked black pepper to taste

Instructions

  • Place the potatoes in a pot, cover with water by about one inch, add 1 to 2 tablespoons of salt, and boil over medium-high heat until they can be pierced with a fork but aren't falling apart. Drain the potatoes and allow them to sit for 10 minutes to remove excess moisture.
  • Heat 2 tablespoons of extra-virgin olive oil in a cast iron or heavy-bottomed skillet over medium-high heat. Add the sliced onions and cook until softened.
  • Push the onions to one side of the pan. Add 1 tablespoon of olive oil and potatoes and cook until the potatoes are crispy.
  • Add the smoked sausage, stir everything together, and cook until the smoked sausage is heated through. Season the dish with Cajun seasoning and salt and pepper to taste then remove the pan from the heat. Allow the potatoes and sausage to cool for about 5 minutes then enjoy!

Notes

Be careful not to over-boil the potatoes. They will become mushy when frying if so.
When cooking the potatoes in the skillet, only stir them 2 to 3 times so they get crispy.
Leftover potatoes and smoked sausage can be stored in an airtight container in the refrigerator for up to three days.
