Fried Potatoes with Smoked Sausage

This hearty, comforting fried potatoes with smoked sausage makes an excellent side dish or one-pan meal. Red potatoes, smoked sausage, and onions crisping in a hot skillet will make your kitchen smell amazing!

This recipe takes simple, pantry-staple ingredients and turns them into a flavor-filled dish that the entire family will love. This versatile dish is totally customizable to suit the tastes of even the pickiest eaters.

Ingredients You Will Need

  • Red potatoes. Rinse the potatoes well and cut them into quarters. Love russeets? Check out our creamy cajun potato soup.
  • Smoked sausage. Use any smoked sausage you prefer, like andouille, beef, turkey, or chicken. Slice the sausage into discs. Smoked sausage also adds incredible flavor to my cajun dirty rice with sausage!
  • Onion. Thinly sliced sweet yellow onion works excellent in this recipe!
  • Homemade Cajun seasoning. My homemade cajun seasoning adds the perfect touch of heat and tons of flavor to this dish. You can also use store-bought seasoning if you prefer.

Variations and Substitutions

This recipe can be customized to suit your family's tastes. Try some of these substitutions or additions:

  • Swap the red potatoes for Yukon gold or fingerling potatoes.
  • Try this recipe with ground sausage or beef instead of smoked sausage.
  • Add red or green bell peppers.
  • Throw in some chopped brussel sprouts, broccoli, or cabbage.

How To Make This Recipe

Step 1. Boil the potatoes in salted water until they can be pierced with a fork but aren't falling apart. Drain the potatoes and allow them to sit for 10 minutes to remove excess moisture.

Step 2. Cook the sliced onions and 2 tablespoons of extra-virgin olive oil over medium-high heat until softened.

Step 3. Push the potatoes to one side of the pan, add the remaining oil and potatoes, and cook until crispy on the outside, stirring regularly. Add the smoked sausage and stir everything together.

Step 2. Once the sausage is heated through, season the dish with Cajun seasoning and additional salt and pepper to taste. Remove the pan from the heat.

Recipe FAQs

Why did my potatoes turn out mushy?

You probably boiled the potatoes for too long. Once the potatoes can be pierced with a fork, drain them and allow them to sit for about 10 minutes to remove all excess moisture.

How should I store leftovers?

Leftovers can be stored in the refrigerator in an airtight container for up to three days. Reheat leftovers in the microwave or on the stovetop.

Can I leave out the sausage?

Absolutely! Make this dish vegetarian by omitting the smoked sausage and following the rest of the recipe instructions as written.

Equipment

  • Measuring cups and spoons
  • 10-inch cast iron skillet

Ingredients
  

  • 1 pound red potatoes - washed and quartered
  • 3 tablespoons extra-virgin olive oil
  • 8 ounces smoked sausage - such as andouille, beef, or turkey, sliced into discs
  • 1 cup sweet onion - thinly sliced
  • 1 - 2 tablespoons homemade Cajun seasoning - or store-bought
  • Salt and cracked black pepper - to taste

Instructions
 

  • Place the potatoes in a pot, cover with water by about one inch, add 1 to 2 tablespoons of salt, and boil over medium-high heat until they can be pierced with a fork but aren't falling apart. Drain the potatoes and allow them to sit for 10 minutes to remove excess moisture.
  • Heat 2 tablespoons of extra-virgin olive oil in a cast iron or heavy-bottomed skillet over medium-high heat. Add the sliced onions and cook until softened.
  • Push the onions to one side of the pan. Add 1 tablespoon of olive oil and potatoes and cook until the potatoes are crispy.
  • Add the smoked sausage, stir everything together, and cook until the smoked sausage is heated through. Season the dish with Cajun seasoning and salt and pepper to taste then remove the pan from the heat. Allow the potatoes and sausage to cool for about 5 minutes then enjoy!

Notes

Be careful not to over-boil the potatoes. They will become mushy when frying if so.
When cooking the potatoes in the skillet, only stir them 2 to 3 times so they get crispy.
Leftover potatoes and smoked sausage can be stored in an airtight container in the refrigerator for up to three days.
