How To Make This Recipe
Step 1. Boil the potatoes in salted water until they can be pierced with a fork but aren't falling apart. Drain the potatoes and allow them to sit for 10 minutes to remove excess moisture.
Step 2. Cook the sliced onions and 2 tablespoons of extra-virgin olive oil over medium-high heat until softened.
Step 3. Push the potatoes to one side of the pan, add the remaining oil and potatoes, and cook until crispy on the outside, stirring regularly. Add the smoked sausage and stir everything together.
Step 2. Once the sausage is heated through, season the dish with Cajun seasoning and additional salt and pepper to taste. Remove the pan from the heat.

Fried Potatoes with Smoked Sausage
Ingredients
- 1 pound red potatoes - washed and quartered
- 3 tablespoons extra-virgin olive oil
- 8 ounces smoked sausage - such as andouille, beef, or turkey, sliced into discs
- 1 cup sweet onion - thinly sliced
- 1 - 2 tablespoons homemade Cajun seasoning - or store-bought
- Salt and cracked black pepper - to taste
Instructions
- Place the potatoes in a pot, cover with water by about one inch, add 1 to 2 tablespoons of salt, and boil over medium-high heat until they can be pierced with a fork but aren't falling apart. Drain the potatoes and allow them to sit for 10 minutes to remove excess moisture.
- Heat 2 tablespoons of extra-virgin olive oil in a cast iron or heavy-bottomed skillet over medium-high heat. Add the sliced onions and cook until softened.
- Push the onions to one side of the pan. Add 1 tablespoon of olive oil and potatoes and cook until the potatoes are crispy.
- Add the smoked sausage, stir everything together, and cook until the smoked sausage is heated through. Season the dish with Cajun seasoning and salt and pepper to taste then remove the pan from the heat. Allow the potatoes and sausage to cool for about 5 minutes then enjoy!
Notes
When cooking the potatoes in the skillet, only stir them 2 to 3 times so they get crispy.
