Guava BBQ Sauce
- 8 ounces guava paste cubed
- 1 cup tomato sauce
- ¼ cup apple cider vinegar
- 2 tablespoons fresh lime juice
- 1 tablespoons Worcestershire sauce
- 2 teaspoons fresh minced ginger
- 1 garlic clove minced
- 2 teaspoons smoked paprika
- ½ teaspoon cayenne pepper
- Salt and freshly ground pepper to taste

Wash, trim, and slice chicken into 1 ½-inch chunks. Transfer the chicken to a bowl and season with paprika, garlic powder, onion powder, salt, and pepper and set aside.
Thread 5 to 6 pieces of chicken on a metal skewer. Repeat 6 times with 6 separate skewers and set the skewers aside.
Place all ingredients for the guava BBQ sauce in a medium saucepan and heat over medium-high until boiling. Reduce the heat to low, cover, and simmer the sauce for 10-15 minutes until thick and smooth.
Preheat your oven to 475°F. Coat a cast iron grill pan with oil then place it in the oven for 10 minutes.
Coat all sides of each chicken skewer in sauce with a sauce brush and carefully place them on the hot grill pan.
Place the chicken in the oven on the lowest rack and cook for 8 minutes. Carefully flip the skewers and cook for another 6-10 minutes until cooked through.
- If you do not have a grill pan these skewers can be on a sheet pan instead.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
