These Dark Chocolate Chunk Strawberry Waffles are light, fluffy and bursting with robust chocolate flavor and fresh strawberries!
One of the things I miss most about "pre-pandemic" life is going out to a fabulous brunch with friends and family! I know we will be able to enjoy such gatherings again soon, but for now I'll create my own fun brunch menu and atmosphere in the comfort of my home. On the brunch menu today - Dark Chocolate Chunk Strawberry Waffles!
Dark cocoa powder, fresh sliced strawberries and dark chocolate chunks are cooked right into light and fluffy waffles to create one indulgent breakfast or brunch dish! These waffles are made with healthier ingredients so they can be enjoyed without all the extra sugar and fat that some waffles typically contain.
There is even an added protein boost cooked into these waffle thanks to the addition of chocolate protein powder. These waffles have the perfect texture and are loaded with robust chocolate flavor. The fresh strawberries add a delightful pop of freshness and brightness to these waffles!
How to Make Dark Chocolate Chunk Strawberry Waffles
In a large bowl, whisk together flour, cocoa powder, protein powder, baking soda, stevia, cinnamon and salt until combined. In another bowl, beat together eggs, vanilla and almond milk. Pour egg mixture into flour mixture and mix with a rubber spatula until combined. Fold in strawberries and chocolate chunks.
Heat a waffle iron and spray generously with cooking spray. Spoon heaping ladlefuls of batter onto waffle iron and close top. Cook waffle for 5-7 minutes, until golden brown and cooked through. Repeat the process with the remainder of the batter. You should get 4 large waffles.
Top waffles with sliced strawberries and warm pancake syrup if desired. Enjoy!
Other Flavor Combination Suggestions
This waffle recipe can be transformed into any delicious flavor combination you can dream up! You can try different fruit with the chocolate waffle batter or you can omit the chocolate and try an even larger variety of different fruit in traditional lain waffle batter. If omitting the cocoa and protein powders, just be sure and add ¾ cups more flour so that you have enough batter.
Some flavor combinations that I imagine would be delicious and plan to try out soon myself are:
- Chocolate raspberry
- Plain batter with white chocolate chunks and blueberries
- Chocolate cherry
- Plain batter with peaches, apricots or nectarines
- Plain batter with cranberries
- Red velvet (just add a few drops of red food coloring and a ½ teaspoon of white vinegar to the chocolate batter) with dark chocolate chunks
- Plain batter with blackberries

Important Note Regarding Sweetener Substitutions
If using stevia or another sugar substitute for this recipe, be sure yours has a one-to-one replacement ratio with sugar. Many zero calorie sweetener brands have “baking blends” which have a one to one replacement ratio with sugar, which work perfectly for this cake. This is the brand I used for this recipe. You may also use regular cane sugar.
