Creamy brie cheese is topped with sweet fig jam and wrapped in puffed pastry then baked up until golden and the center is melty and gooey. This makes the perfect date night or holiday appetizer and is sure to impress!
Cheese as an appetizer is something that will never go out of style and Baked Brie is one that is here to stay my friends. My husband and family always rave about this appetizer when I serve it, and I bet it will be a hit in your home too!

Ingredients you need to make this recipe
- Brie cheese. One 8-ounce wheel of brie cheese works perfectly for this recipe. This brand is one of my favorites. The cheese should be slightly chilled and not room temperature.
- Puff pastry. We will use one thawed sheet of puff pastry for this recipe. I love Pepperidge Farm Puff Pastry Sheets. Allow puff pastry to thaw in the refrigerator for 4-6 hours or wrap the frozen puff pastry in paper towels and thaw it in the microwave. Microwave puff pastry in 15-second increments until thawed.
- All-purpose flour. We use a small amount of flour for dusting our puff pastry to avoid any sticking.
- Fig spread. Any variety of fig spread or jam works great for this recipe. This is one of my favorite brands. We will top the Brie wheel with 2-3 tablespoons of spread.
- Fresh thyme leaves. The brie and fig spread are topped with ½ teaspoon of fresh thyme leaves for added freshness and depth. The combination of the thyme with the sweet fig and creamy brie is incredible!
- One large egg beaten with one tablespoon of water. This creates an egg wash that we coat the puff pastry with to give the finished product a nice sheen.
- Rosemary sprigs, chopped walnuts, and sliced dried figs. These are optional garnish ingredients and make for a lovely presentation.
How to make this baked brie
- Preheat oven to 350 degrees Fahrenheit (177°C). Line a baking sheet with parchment paper and set it aside.
- Using a sharp knife, score the top rind of the brie cheese in a criss-cross pattern, spacing the cuts about 1-inch apart.
- Roll the puff pastry sheet out onto a large cutting board or work surface. Set cheese wheel in the center of the puff pastry square and top with 2-3 tablespoons of fig spread. Sprinkle the thyme leaves on top of the fig spread.
- Fold the puff pastry dough up and over the sides of the cheese, pleating it on top to enclose the cheese wheel. Gently pinch the dough together in the center to seal the gathered pleats. This does not have to be done neatly as you can cover any messy areas with garnish. You can tie a bit of kitchen twine on top to hold pleats together if you like, but this is not required.
- If the dough is no longer cold after assembling, wrap the cheese wheel in plastic wrap and chill it for at least 20 minutes in the refrigerator before baking.
- Place the wrapped cheese wheel on your prepared baking sheet and brush evenly with egg wash. Bake until the pastry is crisp and golden brown all over, about 25 to 35 minutes. Let baked brie rest for 5 minutes, then transfer it to a serving board and garnish with sliced figs and rosemary sprigs if desired. Enjoy!

This baked brie creates the perfect appetizer when served with something to dip into the gooey cheese such as:

This baked brie can be assembled and brushed with the egg wash then frozen until ready to bake. Wrap assembled cheese wheel tightly in plastic wrap and freeze in a lying-down position. When ready to serve, thaw the cheese wheel in the refrigerator the night before and bake as instructed.
You can also store leftover baked brie by wrapping it tightly in plastic wrap and storing in the refrigerator for a day or two or freezing it to reheat later. Leftover puff pastry baked brie can be reheated in the oven when ready to serve.
Do note that the baked brie will be extremely fragile so be careful when wrapping leftovers.
