    Chocolate Crinkle Cookies with Blood Orange Glaze

    I hope everyone is settling into their new routine and making the best of our new reality. I'm actually enjoying the extra time that I now have. I'm enjoying doing the things that I've always said I never had time to do. I've gained at least two extra hours each day by not having to ready to go into the office each day and not commuting back and forth. These Chocolate Crinkle Cookies with Blood Orange Glaze are coming to you thanks to the extra time I've gained in my day!

    Typically, I don't bake much because I worry about keeping my waistline in check. However, I now meditate daily and practice yoga several times per week. I've purchased several sets of dumbbells and do strength training exercises everyday for 30-45 mins. I run miles around my neighborhood - getting beautiful fresh air and not on a treadmill in a gym. I do HIIT training in my spare bedroom/new home office.

    Basically, I'm doing way more for my mental and physical well-being than I was commuting to an office everyday. So you know what - I'm baking the damn cookies and enjoying a couple of them with no guilt! Now onto the cookies! There isn't really much to explain here - the recipe is so simple!

    Making Chocolate Crinkle Cookies with Blood Orange Glaze

    Preheat oven to 350 degrees F. Line a baking sheet with parchment paper, set aside.

    In the bowl of your stand mixer fitted with the paddle attachment, or in a large bowl with an electric hand mixer, combine cake mix, eggs, oil, and vanilla extract until well mixed.

    Scoop powdered sugar into a medium bowl. Using a medium cookie scoop, drop balls of dough (about 1-1.5 inches each) into the powdered sugar, roll to coat.

    Place dough balls on prepared baking sheet about two inches apart.

    Bake in preheated oven for 8-10 minutes. The centers will look slightly undercooked – they will set while cooling. Allow cookies to cool for 5 minutes on pan before removing to a wire rack. Serve warm!

    Blood Orange Glaze

    Whisk together powdered sugar, orange zest, salt and 3 tablespoons of blood orange juice.  Adjust thickness by adding additional orange juice, 1 teaspoon at a time.

    Ingredients
      

    • 1 15.25 ounce box Devil’s Food Cake Mix
    • 2 large eggs
    • ⅓ cup vegetable oil
    • 1 teaspoon vanilla extract
    • 1 cup powdered sugar

    • 1 ½ cup powdered sugar
    • zest of half a blood orange
    • 3-4 tablespoons fresh blood orange juice
